I have been m.i.a. lately. I haven’t been doing anything all too exciting. Easter weekend was very eventful though. We went to local zoo all afternoon on Saturday. Then Sunday we attended Easter church service and spent time between our families. I want to take more pictures and do more videos so hopefully I’ll have some nice content for you all soon!
This would have been today’s lunch in my rush this morning I grabbed the wrong container. What I would’ve had was: baked tilapia over a bed of rice, sliced avocados, and roasted carrots. I had a late start to prepping my lunch last night so I decided to keep things simple. In total, including prepping and cooking time, this meal took me 45 minutes. I love quick and easy delicious meals.
I was craving a lettuce wrap so I decided to make one for lunch. I used ground turkey with onions, then added tomatoes and avocados. I made a simple avocado and cherry tomatoes salad with lemon and salt and pepper dressing. I cannot wait to dig in later!
Tonight my daughter and I ran some errands and did a little last minute shopping for our little family trip tomorrow. I have been wanting some good curry soup for a while now and decided why not tonight? I have been so good these last two weeks. I also find it difficult to eat at a Thai restaurant and not order mangoes with sweet sticky rice. I found this red curry really sweet at first but the balance of the sweet of the coconut milk and the chili peppers was perfect.
Last night I decided to bake some tilapia instead of my usual chicken. I made a garlic pasta, threw some veggies in there and called it a day. I was able to prepare and make this meal in 30 minutes.
