Tonight my daughter and I ran some errands and did a little last minute shopping for our little family trip tomorrow. I have been wanting some good curry soup for a while now and decided why not tonight? I have been so good these last two weeks. I also find it difficult to eat at a Thai restaurant and not order mangoes with sweet sticky rice. I found this red curry really sweet at first but the balance of the sweet of the coconut milk and the chili peppers was perfect.
Last night I decided to bake some tilapia instead of my usual chicken. I made a garlic pasta, threw some veggies in there and called it a day. I was able to prepare and make this meal in 30 minutes.
This chicken was so good even my coworkers complimented. Yesterday I wasn’t sure what to make for lunch. So I thought a simple salad would be good.
3/14 today’s lunch: roasted sweet potatoes, chicken breast green bean stir fry. So simple and so delicious.
Today’s lunch: basil pesto pasta with roasted cherry tomatoes, chicken breast, and broccoli. My side is roasted carrots, these have been my favorite lately! Emilia loves them too!
I wanted to switch things up a little and decided to make some pasta for lunch. Our prepping goal is mainly to cut down on the spending. As we are aiming to purchase a home soon. So why not kill two birds with one stone? Saving money and eating healthy sounds great.
The first three photos are from Top Golf on Saturday. The last picture is our Sunday night dinner. Enjoy 😃
We have been spoiling ourselves this weekend with delicious food. Not necessarily the healthiest for our bodies but definitely tasty. Last night we had dinner at Top Golf, a fun driving range in Roseville. Then tonight we had dinner at Wingstop. This new week we are planning to prep our lunches everyday. We also plan to eat healthier throughout the day. And during the weekend indulge a bit.
My hubby decided to join my meal prepping lunches. This for each of us to take to work tomorrow for lunch. This will help us save money and be on track with our nutrition. The goal is our own home and healthier us!
Tomorrow’s lunch (3/12): backed lemon pepper chicken and roasted broccoli, cucumber, and carrots.
