This would have been today’s lunch in my rush this morning I grabbed the wrong container. What I would’ve had was: baked tilapia over a bed of rice, sliced avocados, and roasted carrots. I had a late start to prepping my lunch last night so I decided to keep things simple. In total, including prepping and cooking time, this meal took me 45 minutes. I love quick and easy delicious meals.
Tonight my daughter and I ran some errands and did a little last minute shopping for our little family trip tomorrow. I have been wanting some good curry soup for a while now and decided why not tonight? I have been so good these last two weeks. I also find it difficult to eat at a Thai restaurant and not order mangoes with sweet sticky rice. I found this red curry really sweet at first but the balance of the sweet of the coconut milk and the chili peppers was perfect.
Last night I decided to bake some tilapia instead of my usual chicken. I made a garlic pasta, threw some veggies in there and called it a day. I was able to prepare and make this meal in 30 minutes.
This chicken was so good even my coworkers complimented. Yesterday I wasn’t sure what to make for lunch. So I thought a simple salad would be good.
3/14 today’s lunch: roasted sweet potatoes, chicken breast green bean stir fry. So simple and so delicious.
My hubby decided to join my meal prepping lunches. This for each of us to take to work tomorrow for lunch. This will help us save money and be on track with our nutrition. The goal is our own home and healthier us!
